Small Batch No.13 pays tribute to one of our original brews: La Bestia Aimable. We aged this Belgian Dark Strong Ale for over two years in house cultured barrels. The aroma starts with hints of acidity followed by sweet and floral notes that balance out the underlying funky earth tones. The dry body showcases the dark stone fruit flavor and finishes with a pleasant tartness. We decided to split the batch and give you two variations, one with tart and dark sweet cherries, the other with local Texas figs.

“8TTL:11.17.17” stamped on label. Stored on shelf at store. Stored at 42 degrees and served at 42 degrees in a hand washed and dried Jester King snifter.
Appearance – 4.
Body – Dark brown/black, opaque. When held to the light, red-amber and weakly translucent. Bottle conditioned.
Head – None.
Lacing – None.
First pour – Red-amber, clear.
Aroma – 4. Initially strong cherry which weakens over the course of drinking.
Flavor – Begins with moderately sweet cherry but quickly becomes mildly tart with almost too much cherry. No alcohol (12.5% ABV) flavor. No diacetyl, no dimethylsulfide.
Palate – 3 – Less than medium, silky, nearly flat.
Impression and interpretation - 4 – In this one, the sediment is firmly bonded to the bottom of the bottle, so it pours clear, unlike the fig version. The cherry is almost to prominent making this taste more like cherry juice than beer. Otherwise, a fine brew.
