Bold, bright and surprisingly sour, the Alabama brewery takes their hand at the controlled spontanae that puts Brussels beer on the map. Their lambic style ale is sewn together with the bold taste of plum fruit in not so subtle fashion.
Alalambic, Plum edition pours a pale mauve color with an off white, short lived crown. Its tangy aroma resonates with red wine, cider, citrus, dark fruit and a gentle waft of the sea. Upstart sweetness is juicy and succulent with the remnants of fruit juice, hard candy and a light toasty savory taste.
As the sweetness rapidly dissolves, the sourness quickly overcomes the malt. Both the tartness and fruitiness rise from the malt and captures a strong sourness of dry red wine, sharp cider and a trail of balsamic. Lime, lemon and sour gooseberry frame the acidity while a peppery side of peppercorn and acrylic follow.
Medium bodied for lambic, the beer's fruit forward heartiness and the hints of toast and peanut skins offer a heft that balances the beer's ultimate dryness. Hints of fruit juice trail into a spicy and lightly solventy flow into finish. A return of weathered oak, cork taint and cellar like dustiness return in a retro olfactory way.
