Inspired by the Berliner Kindl Weisse which traditionally has an alcohol content of 2-3%. To make it more "imperial" we raised the alcohol content of 4%.
Uncooked, unhopped, raw wort (half barley and half wheat) were spontaneously fermented for five days. Then, yeast and lactic acid bacteria was added for a second fermentation for four days to give the beer the characteristic tartness. Then the beer stored for seven weeks.

Notes from backlog. A very high level of acidity, with lots of citrus but also other undefinable tropical fruits. Enjoyed next to dark chocolate beers and really stood out!
