Crisp, tart and light straw in color. This beautiful beer was brewed in May of 2013, making it 2 full years old! While not a traditional Gueze, as it wasn't a blend of old and new beer, it was designed to carry many of the same characteristics. A malt bill consisted of 50% wheat and 50% barley. Started with cocktail of Brettanomyces and lactic acid producing bacteria. We limited the amount of oxygen we added to the cooled wort and let this microbial stew do its work. The result is a slightly tart (lactic acid) slightly funky (Brettanomyces) refeshing ale.
