Collaboration with de Garde Brewing & Sante Adairius Rustic Ales
Elements of Composition is a special project with De Garde Brewing in Tillamook, Oregon and Sante Adairius Rustic Ales in Capitola, California that began in early 2016. Back then, we traveled to De Garde to create a special blend of 100% spontaneously fermented beer from De Garde, foudre-aged saison from Sante Adairius, and 100% spontaneously fermented beer from Jester King. In early 2017, we went on to create Blend 2 at Sante Adairius. Finally in early 2018, we created Blend 3 at Jester King. Elements of Composition is a beautiful blend of beer, friendship, passion and patience.
Blend 3 was packaged in March of 2018 and was naturally refermented in bottles and kegs. It's 6.2% alcohol by volume.

Hazy sunset amber with a short but soft creamy white blanket dying to a thin flat collar.
Absolute nuanced deliciousness. Balanced funk, oak, and brightness. Citrusy, herbal, and nutty. There's a hint of passion fruit balsamic in the oak, but this is just perfectly refreshingly sour, and is accented by notes of green apple, pear and orange marmalade.
The lightly soft tingly effervescence lifts so many complexities so well, before the just dry finish leaves you wishing this was a magnum.
