Aged on cedar soaked in dark rum, the first thing that will strike you about this beer is the spicy cedar nose. Notes of figs and ripe fruit will delight you before the rich Belgian spiciness coats your tongue. The lingering aromas and flavors of cedar and rum stick with you until your next sip.

Dark reddish brown with a thin veil of lacing in the Het Kapittel chalice. Plenty of spritz. Some woody notes with a surprising acidic tang, sort of a lemon-lime soda flavor. Not a lot of aromatics, but there is a whiff of almost sour wood in the nose.
The first thing to notice is how dry this is. There is plenty of dark malty flavor, but very little sweetness to start. The the Belgian yeast dries it out even more. There does seem to be a little fig and rum flavor. Moderate yeasty bitterness.
An interesting brew that doesn't taste hot, considering how strong it is. A pleasant sip that is more like a dry Sherry than the often-sugary big Belgian brews. From the 22 oz bottle purchased from BottleWorks in the Wallingford neighborhood.
