11/2/2014. 22 oz bottle purchased at Full Throttle Bottles, poured into a goblet. Pours with a thin layer of white head that dissipates quickly. Decent amount of lace, though. Golden and somewhat hazy. Aroma of citrus, coriander, white pepper, some biscuit and yeast. Sweet flavor, with some sour (white wine) and spice coming out in the finish. Fizzy, heavy body with alcohol spice and a medium length finish. A tasty beer.

The appearance is classic Tripel, with the clear golden color and pure white foam. Spritzy and well carbonated on the tongue. Yeasty aromas fill the nose. The alcohol adds something zingy behind the scenes but is not apparent.
The overall fruit-tinged flavor can only be described as luscious. There is a nice appley flavor with the bitter tang of cider apple skins. This is all so clean and aromatic, with just enough sweetness to start out every sip. The finish is quite dry, in the usual Belgian yeast fashion, but not at all harsh. The style is lighter and more sophisticated, rather than the heavy sweet style. A winner from a brewery I've never tried before.
One distinctive feature is the sudsy mouthfeel. I don't think I've had a Tripel that was pleasantly so fizzy yet fine-grained. From the 22 oz bottle purchased at Bottleworks in Seattle.

Poured from 22oz bomber into a tulip.
Appearance: medium golden hue with a pretty thick haze. Head is a thick finger of frothy ivory foam. Pretty nice!
Smell: sweetly malty with a bit of a wheaty character. There is a spicy quality as well, perhaps a tiny bit phenolic. Nicely characterful without being overpowering.
Taste: grassy, grainy, a little phenolic. Alcohol is a bit hot in the mix. Hop bitterness seems a little strong for the style, but it's not too distracting. Good character, but a little bit unfinished or rough-tasting.
Mouthfeel: medium body with a good carbonation and a nice, smooth creaminess. Good.
Overall: pretty tasty and drinkable. On account of the heat, I'd guess this beer would improve with age.

A: Poured a nice clear and light golden color with good carbonation and a nice fluffy white cap that has some staying power

T: Starts out with lighter fruits, perhaps pear and green apples with some white grape husks. Some yeasty characteristics come out leaving a light hint of spice, booze and a wee bit bitterness
M: Medium body, the beer falls a little flat on the taste when it sits on the palate but presents some phenols, sweetness. I was looking for a bit more carbonation
O: Pretty good, I would drink it again. I have noticed a good climb in Wingman beers. Quality and overall taste keeps soaring but most noticablly carbonation and fermentation.
