Don't get fooled by the type of beer this is. It's a wheat beer in name only. As a whit, wit, or witte type of beer it is not very good. There is a citrus over tone and that's about it. Faintly reminiscent of Ommegang Witte, but too faint to really consider it this style. Mouth feel is thin and carbonated, lacing is good, but the beer is not.

I'm not sure what's so "mysterious" about this beer because it seems to be a pretty straightforward wheat beer. It's labeled as a "Biere Blanche", but don't expect a witbier as it doesn't have the orange-peel and coriander of the style. It's just a "white beer" because it's got a white head, like many wheat beers.
It pours a hazy golden body beneath a short head of creamy bright white foam that holds well before dropping to a solid surface covering and leaves short 'mountains' of lace rising along the side of the glass with each sip.
In the mouth it's light-medium in body and moderately carbonated, leaving it fine bubbled, gently caressing, and then smooth as it warms a bit.
The aroma expresses wheat with a touch of minty herbs, grassiness, some floral notes, and background mineralish/earthiness. As is often the case, the flavor follows suit, adding in a subtle touch of spiciness. It's gently sweetish upfront, but then balanced by dull bitterness and a low pH. It's not quite tart, but it has an edge to it. It reminds me of the character of some of the best biere de garde's. The herbal side comes forward towards the swallow, and then lingers nicely in the finish alongside some gentle floral and mineral character.
It takes a deft hand to create a beer that's both delicate and complex; and the "Mysterieuse Lady" is quite the charmer. Originally a summer beer, it's now available year-round as it should be.

Poured out a hazy, golden-yellow color with a nice sized, white head of foam. It smelled of lemon, wheat and some funkiness. Sweet wheat flavor with not much else. Oddly funky.

This is a fairly mild wit. Minimal wheat influence. Kind of just there really. Minimal citrus tones. Easy enough to drink. But not really that inspiring or interesting. Glad I got to try this and every other beer from this brewery that I have. Didn't find any of their stuff while in Paris. But who needs Paris when you have Bethlehem, PA!
