its been too long since ive had the base beer to levy a good comparison between the two, but i liked this one a lot, quite old now in the little green bottle. these guys have always been one of my favorites, and its beers like this that interest me the most, although i wish i cracked into it a little sooner, it tastes perhaps a bit past its prime now. its not as dry and funky as i remember the base being, less brett to me and maybe maltier, a perception created by the staleness in the malt i reckon. light amber color, tall off white head, some sediment in the bottom of the bottle, green glass weirdness in the nose, i love old belgian styles but this one is a little cardboardy now. good barrel character still though, some sharpness from the wine, still a fruity element there, even floral with the saison yeast and what i can appreciate from the brett, peach and apricot nuance, wet wood, farmy and different, but tired at the same time. good carbonation here is helpful at this juncture, and the weight from the barrel adds needed richness, but i wish we didnt wait so long, there should be more brett to this, it should be drier, and it shouldnt taste as fatigued and simple as it ends up. white vinegar and green tea and grasses and oak, earthy and belgian and good, but less wild and less refined than i hoped it would be...

I guess I am bucking the trend here because I really thought this beer was creative and well executed. The highly carbonated orange body opens up the aromas for the nose: grape must, barrel funk, oak, dry white wine, lots of old world malts, and pear, but there is a funky chemical smell in the background that distracts. Taste the chemical is gone, and the flavors are allowed to shine, while picking up grape sweetness with the must, some apple with the pear, and some general earthiness in the malts. Body is highly carbonated yet slightly chewy, and in general vinous and funky.

Pours a two-finger off-white head that stays forever leaving a thick lace. Hazy amber color, a few floaties. Good carbonation and medium bodied. Sweet malt, some citrus nose and flavor is tart citrus that is mellowed by the sweet malt. Very light bitter aftertaste. Higher ABV is hidden. The 375ml green bottle was a gift.

Pours a light, golden amber with tons of bubbly head with a slight golden hue. Head had some serious staying power, it got thinner as I drank, but held til the end; while sticky lacing clung to the glass. Aroma is light, bready, toasty malt; sweet grassiness, perfumed floral; white grape; orange zest; vanilla; some faint vegetal hop spice; and a slight must. Taste is everything from the aroma but in a playful and ever-evolving way: one sip bright orange zest, another more mustiness, the next floral. So very light and velvety on the tongue. It surrounds the palette with surprisingly low carbonation.

I really like the regular Snowball Saison and this was a nice take on it. Aged approx. 18 mos. in the cellar.
Poured a deep golden color with beautiful head and excellent lacing.
Aroma of funk, white wine and mild oak, with the rest of the usual saison aromas.
Taste was funky with moderate wine characteristics and mild oak presence.
Very nice light mouthfeel, easy drinking for 8%, gonna be hard to save the last bottle but I'm curious what another year of aging will do for this beer.

Reading the ingredient list would make any man shiver with eagerness. Simcoe, Amarillo, Hallertau, Tettnanger, Brett yeasts and candi sugar.
Dark orange pour, more than three finger fluffy head. Lots of bubbles rising, lasting head, lots of traces on the glass as it settles to a whole finger foamy cap.
Strong aroma hops smell, nice barnyard funk (not too aggressive), sweet and bitter citrus, lots of grape (unripe grape peel), some nice tropical notes too, faint barrel.
Great taste! Starts with sweet citrus (tangerine, lime, pomelo) mixed in with great tropical fruit (big pineapple, faint mango), followed by (not overly) dry white wine, a bit of tartness and a small hint of floral tea, like jasmine or elderflower. Brett funk enhances the "greeness" of the brew, but doesn't dominate. There's also a sweet malty vanilla (sure, from the barrel, but also a bit lactic?) balancing it. Barrel brings a bit of woodiness too, especially towards the finish, that's otherwise dominated by tasty hops.
Medium in body, fluffy, not a lot of carbonation.
This was actually a really really good saison. A bit hop-oriented and barrel aging wasn't strongly apparent, but extremely tasty.

12.7 oz bottle poured into a tulip

A- A clear amber color with a four finger white head.

S- Hoppy, getting citrus and tropical fruits, mild funk, nice sweet malts, some wine and oak. Smell more like an IPA than a Saison.

T- Tropical fruits, tart citrus, some wine that adds a nice brightness to the flavor, oak, piney/earthy finish with a little bit of funk, and a nice caramel malt backbone.

M- Medium body, nice carbonation.

O- I really enjoyed this beer, but this taste much more like an IPA than a Saison, so in trying to rate to the style I couldn't give it 4s across the board. I will pick this up again because it is a good beer, I will just ignore the fact that they are calling this a Saison.

375ml bottle poured into a To Øl teku glass.

The beer pours a lightly hazy apricot color, hues of copper and orange with a few loose bubbles rising to the top of the glass. A big, fluffy, soapy white head rises about 2 or 3 fingers high and has great retention and leaves behind a massive amount of soapy lace. The aroma is still quite hoppy, much like the base, notes of mango, pineapple, very fruity yeast, white riesling grape, a light acidity a bit of musty oak, funk is more muted and in the background while the malt struggles to get through. The barrel doesn't really do much to tone down the base beer, but in an odd way, does make it a bit more intriguing. The flavors are in line, lots of tropical fruits, ripe mango and juicy pineapple, tangy citrus that draws out the grape and wine character and a bit of wildflower makes itself know, strong bitterness after the fact with musty oak and a touch of funk, but some rich grain eases the finish a bit. The mouthfeel is nice, robust and assertive, while juicy and soft, carbonation zips across the tongue. The finish is a touch dry, but generally very smooth.

Verdict: A very nice experiment from To Øl. The base beer struck me as more of an American IPA than a saison and this rings true to that, but the wine barrel adds some interest and intrigue, perhaps a white wine barrel aged IPA? The flavors meld well and assert themselves nicely, it's a bit too bitter for me as a saison, but when thought of as an IPA, it's quite enjoyable.

375ml bottle split, tried next to the regular version.

Dark orange with a bubbly off-white head. Patchy cap remains along with some lace.

Scent is pretty intense all around. Big on sweet malt, hops, and wine - toffee, pine, citrus, bread, tart white grape, oak, alcohol.

Taste brings citrus, kiwi, earthy and grassy hops, sweet toffee malts and bready malts, lots of white wine presence in the finish with tartness, oak, alcohol, and vanilla cake tops with lots o' frosting. Light wild/bretty qualities to it.

Mouthfeel is a bit too foamy and thin, but not bad otherwise. Fair amount of alcohol presence.

An interesting and decent treatment to the original but it comes off a little confectionary and harsh.
