12.7 fl oz bottle
Served in a snifter
This beer pours black and is topped with a couple inches of mocha head that coats the side of the glass.
The smell is chocolate and smoked malt. I get a little caramel and vanilla as it warms. An omnipresent booze smell also lets me know that this beer is serious.
The taste is chocolate, coffee, and smoked malt right away. I get some oak and hints of bourbon. The finish is dry. There is a little bitterness in the form of roasted malt and black coffee flavor.
Medium bodied with a smooth mouthfeel
It is a dry, smoked stout. It is not the best beer that I have had from To Øl. I am not sure how long this was on the shelf. I did only pay half price for it though.

375ml bottle, best before 14.05.28, poured into a stemless wine glass.
The beer pours a deep jet black color, cola brown hues that's very thick and opaque with a firm finger of khaki head that has good retention and yields nice spotted lacing. The aroma is pleasant, heart roast, some smokiness, lots of bittersweet chocolate, burnt wood, light spirit with a strong lingering char. The flavors are good, tons of smoke, charred wood, some salinity comes out as well with some nice roasted grain, toasted coffee bean, some brown sugar, something almost reminiscent of maple appears with lingering stone fruits and chocolate. The mouthfeel is fine, coating and lively medium heavy body, crisp texture with a dry finish.
Verdict: A nice adjunct stout from To Øl. The standard version of Goliat remains one of the more epic coffee stouts on the market and this is a much smokier and drier version, definitely lacking the richness and decadence of the standard brand but this works very well in its own right.

A 375ml bottle with a best before date of 14th May 2021 (I think, as it’s a bit dark). Poured into a snifter glass.

Mouthfeel: Creamy, medium to full bodied with moderate to soft carbonation.
Overall: An enjoyable sipper although perhaps the name deceives as I have no idea where the maple comes in as I don’t get it in the aroma or the taste. Beacon or bacon? maybe, I get from the smokiness. I’ve noticed that I’ve rated this higher than the original Goliat, but to be fair, it’s been so long that I can’t really compare, but this was enjoyable.

I'm looking to be the outlier here 'cuz I thought this beer was great... Maybe it aged really well, maybe it just hits a lotta marks for me personally...
Label says "Maple Beacon" but all the beer sites online have it corrected as "Maple Bacon." My label says, "Smokey (sic) imperial coffee stout matured with bourbon oak chips" and lists these ingredients: water, barley, oats, hops, coffee, and yeast... No maple or bacon... Couldn't find the beer on the brewer's site or their instagram site...
Brown-black pour turns out black with a cola-colored translucency around the edges in an over-sized snifter... Center-pour produced a fluffy-looking brown foam cap that was satisfyingly persistent - even at the bottom end of the glass, a faint sheen of foam covered most of the beer's surface...
The bourbon is well-expressed in this stout, and vaporous alcohol will stir the nostril and palate... The chocolaty character of the beer is pronounced, and while it provides a silky sweetness of chocolate, the drying char of coffee and smoke reigns it in, assisted by faint tannic notes... The feel is relatively lean, but not a detractor for me, though more often than not it is; suitably sweet, but lightly drying with wood smoke and dark roasty malts and coffee...
I'd recommend it. I think it was like $11.99 at Total Wine for the 12.7 oz. bottle; 10.2% abv...

I've enjoyed regular ol' Goliat before at various fests but this is the first variant I'm enjoying on my own. I found this bottle at a small liquor store in Pepperell, MA that was recommended to me by a beer-minded co-worker (thanks Evan!) alongside a couple other interesting brews.
The pour here is insanely deep and dense looking; a dark, voluminous head of mocha foam builds up atop a pitch-black liquid that seems to consume all surrounding light. Damn scary appearance here. I mean, the head literally overflowed even with my first 8 oz pour into a 12 oz snifter glass... it's really a very imposing brew. There's a little bit of sticky lace and some solid legs as well. Yeah... this one is awesome right off the bat.
The nose is more "coffee" than anything else, with some hefty roast and light chocolate/mocha notes wafting up above a base of darker maltiness. There's a light whiff of smokiness, sure, but it's nothing out of the ordinary for a big American or even Russian imperial stout, honestly. I don't get much maple either, but, for the record, the label says nothing about what actually implies or explicates the "maple" in the beer's name... so I guess that makes sense, but also seems like somewhat false advertising? Eh, I dunno. It sort of just smells like normal Goliat with a slight smoke note and some ethanol heat from the bourbon oak chip aging.
The flavor profile seems a bit more biased toward the smoke than expected from the nose. A bit phenolic and Band-Aid-y with strong roastiness, coffee and chocolate. Light herbal undertones and chalky yeast with a rather amorphous mid-palate. Chewy and really dry. The bourbon doesn't really come across at all, but there's a very light tannic note that kind of comes across in the finish. Doesn't really fit, though, and seems a little distracting. I would obviously prefer a more full-throttle BBA aging for something like this, but the recipe doesn't quite seem like it would support that anyway. Lightly acidic (maybe the coffee?) as it opens up and as I sip. Starts to get a bit savory as well. Slightly messy... still don't understand the "maple" billing here. Maybe kinda joking, knowing these guys (and Mikkeller, and Evil Twin... something about Danish people seems pretty jocular, I dunno). Feel is heavy bodied, slick and rather thick on the tongue. Oily, even. Drinks alright, but it's a sipper. I'll enjoy the rest of my bottle but will probably stick with regular Goliat in the future. I remember it being somewhat hoppier and more bitter, which I prefer... unless To Øl can do a REAL bourbon barrel version of something like this... then I'll be all in!
