We took the Mathias recipe and substituted Simcoe for Citra hops, then added more! 28lbs dry-hopped, 50lbs of hops total!!

On-tap at Haymarket. Served in a 5oz taster glass.

A - Off-white foam settles to a near-complete cap and sheets of lace. Lightly hazed bronze body. Nice looking beer!

S - Huge Simcoe hop aroma! Tropical fruit melange, with lots of guava and passion fruit present. Mild malt sweetness that is fairly restrained in comparison to Mathias, although the ABV is also significantly lower - is Haymarket dialing back their malt bills in general?

T - Taste is quite similar, with loads of tropical fruit and mildly zesty citrus hop flavors, and significantly less of the brown sugar malt that I get from regular Mathias. Moderate bitterness, and much more in line with what I like from this style.

M - Medium-full body, zesty, active carbonation, and a mildly oily and resinous finish. Well-hidden alcohol, and easier to put down that Mathias as well.

D - I really liked this, and the draft sample I had was much better than the cask version at Night of the Living Ales. I'd love to get this again, and I hope it gets into the regular rotation - even when Citra isn't scarce, as in some ways I think this is the better beer.

Enjoyed on tap at Haymarket. Served in a 16 oz. chalice.

A: Pours a deep amber color with some yellow tinted foam forming on the pour. It recedes slowly to a thin film that leaves some sticky sheets of lace down the glass.

S: They weren't lying in the description, this is a complete hop bomb. Loads of citrus and tropical fruits. Pineapple and mango with some orange and lemon. Citrus zest with an underlying piney scent. Sweet biscuit malts are present, but definitely play second fiddle to the hops.

T: The doesn't quite live up to pleasantries of the nose. Mango, a touch of pineapple and some piney bitterness. Orange pith with light cracker malts.

M: Medium bodied with a medium carbonation level. Smooth with a fruity and sweet finish.

O: The massive hop bouquet from the nose didn't quite translate to the taste. It was a still a solid beer, but I would have like some of the citrus qualities to the nose to crossover to the taste.
