De Troch lambic with Japanese Gari ginger.
Pale pastel yellow, larger bubbles clustered around the edges. Aroma is intense, almost like a spruce tree at first. Ginger is very strong. Taste is similarly strong, with a briny salinity that seems unusual. Very overpowering, the base lambic is barely there, a hint of preserved lemon. Saltiness was odd, but it was pretty interesting to try.
