A - Amber with a big tan head. The carbonation creates a vigorous head that finally dies down after about a minute. It's clearer than I expected from an unfiltered beer. Most of the yeast is in the bottom of the bottle.
S - Malty, sweet, aged fruit. The smell reminds me of week old bananas that are ready for banana bread. There are also hints of dehydrated apples.
M/T - Good medium body. The initial flavor is sweet with a hint of toasted malt, followed by a sort of porridge/oatmeal type flavor. It's pretty good, and very unique. Now that the fondue has arrived this is the perfect pairing! The sweet characteristics of the beer are more pronounced and there is light toasted malt character. Also a slight hint of the banana that was in the aroma.
D - This is the best way to try the beer since Engelberg is the only place to get it and the same monks that make the beer also make the cheese for the fondue. The beer is good on its own but even better with the local fondue.
