a belgian dubbel with sake yeast, one of the more ambitious beers i have seen from these guys and truly one of their best, every bit as high quality and well refined as their best stuff, its truly killer! deep amber in color, lost of body evident and an off white head. it smells like chateau type specialty malt first, dried cherries, bran muffin, molasses, and toffee, with a uniquely estery yeast that really isnt belgian to me, the sake! the flavor is as curious as the nose, but so delicious, with raisin and fig notes, dried and sweet at the same time, caramel, almonds, desserty pastry, blackberry, port wine, walnut, white wine, dried flowers and potpourri, just impossibly interesting but also not too much in my face, like the yeast part is whats cool, but its also subtle enough to be drinkable, a very careful and expert fermentation here. underneath the base dubbel is very solid as well, nice rich malty body and long run of flavor even without the yeast, light cocoa and toasted elements to it, maybe a touch darker on the grain than many, not too sweet at the end. i love what the sake yeast adds to this, it makes for one super unique brew. they should package this one, nothing quite like it that i am aware of, the sake yeast subs in for the belgian really well!
