Copper colored with a light sedimentary haze. There’s a quarter inch of off white on top l. The aroma is of lime and pale wheat. I’m tasting lime and what I presume to be prickly pear which is very sweet but slightly green vegetal in nature. The mouth is light and refreshing

16oz can pours a vibrant pink-orange-red color very reminiscent of grapefruit pulp with a thick, bubbly head of white foam that is just so barely pinkish. Fades down to an almost nonexistent ring. Smells very tart with a hint of fruit and salt. I am not familiar with the flavor of prickly pear, but the flavor is a very rich, exotic, and juicy fruit flavor. The tartness is relatively strong but ephemeral and fades quickly without a puckering sourness. Mild sweetness and hint of salt round out the flavor perfectly. Light to medium body with a strong, sparkling carbonation mouthfeel.
This was a very nice sour. It's not too sweet, tart, sour, or salty and it is neither overbearing nor sparse in flavor. Would certainly consider buying again.

I had this beer on-tap at the grand opening celebration for the HopCat beer bar St. Louis location. It was presented in a snifter, and was a cheery-pink color with a thick head. The aroma was dry, with some grass and fruit notes. I didn't get he prickly pear at first, but it comes out as the beer warms. The taste is clean, dry, and tart, with plenty of fruit notes. Drinkable and soft in body for the style. Nice.
