Pours a hazy orange with low, wispy head.

Smell is tart and hoppy with a good shot of brett. Notes of citrus, mango, white pepper, rye, oak, tannic white wine and peach. A lot going on, in a good way.

Taste is just so damn good. Tart and fruity with a solid bitterness. Notes of citrus, pine, white pepper, grapefruit, oak, white wine, peach and a solid punch of brett. Finish is dry as a bone and lingers forever, and no hint whatsoever of the ABV. Perfect bretted, or Belgian IPA.

Mouthfeel is medium, dry and well carbonated.

Overall, I LOVE this beer. I rated the "original" Monk a perfect 5, and while I never do that anymore, this is just sublime.

This one pours a slightly hazy dark orange color, with a small foamy head, and not much lacing.

This one pours a mostly clear and slightly hazy orange color, with a small head, and a lot of lacing.

This smells sharply and deeply funky, with grassiness, cloves, blueberries, grapefruit rind, etc.

The Mosaic gives this a nice soft fruitiness and some blueberry notes. It helps balance the heavy duty sharp Brett character - cat piss, funky grass, grapefruit rind, chalk, and a big citric character. It's delicious, but it would certainly challenge a novice drinker.

This is light bodied, and pretty crisp, and strangely refreshing.

I'm not sure if this is an improvement on the regular Bitter Monk. It's still a great beer.

Medium golden pour from the 375 mL caged and corked bottle, producing a finger of white head off of a moderated pour... Tried shortly after the traditional Citra version, and wow - the brett really pops here - super dry and sharply citric, much less soft juicy fruit than the Citra but with a big tang and a lingering tacky funk and woody oak tannin... Both versions are top tier, highly recommended Belgian brett DIPAs - pick your preferred hop and dive in...
