To craft it, the acclaimed brewers fermented and aged their house-mixed cultures with Brettanomyces and Saison yeast in Missouri Oak. Then, they dry-hopped the brew with an interstellar combo of Phantasm Powder, Galaxy, and Strata Hops.
And to really elevate the complex brew to otherworldly heights, they did a secondary fermentation with passion fruit, then bottle conditioned the whole brew on champagne yeast!

Appearance: Pours clear and golden colored with a two finger head that fizzes deliberately leaving speckles of lacing as it slowly fades away
Smell: Passionfruit, lemon, barnyard funk and Brett
Taste: Passionfruit and lemon forward with the barnyard funk intruding; the finish brings the dry Brett impact along with more herbaceous funk
Mouthfeel: Medium body with low to moderate carbonation
Overall: Been a while since I have had a Brett beer as this type of brew seems to have gone out of fashion along with so many other styles; not the best example but perhaps my tastebuds have changed

Really nice beer that balances the dryness of the Brett with the fruits and hops. Reminds me of a well made funky Grizette but it’s a surprising 7% ABV but drinks a lot lighter. No sourness, just slightly tart and slightly funky. A well enjoyed and interesting beer.

375ml bottle, with beautiful skull and space man art, cork and cage. Served in a tulip. No head, sediment mostly retained in bottle. Beer is kind of a sickly pale yellow, slightly murky. Not much in the way of aroma, but maybe a bit of fresh grain. Passion fruit flavor is very evident in the flavor, though not at all overpowering. For a wild ale this beer is actually hardly sour at all, which is cool for me. It's also nearly flat, which is unexpected. I could have done more carbonation here. Anyway, with regard to the flavor, this is not a brett bomb, it's a tropical and fruity ale that happens to be a wild ale and not an IPA (not even a little bit). Unexpected and interesting.

Poured from a 375ml undated bottle into a tulip glass.
Look- Pale straw, moderately hazy, no visible particulate, sudsy white head, extremely below average lacing, below average head retention.
Smell- Floral, oak, brett, lemon zest, between weak and medium strength of scent.
Taste- Peach, lemon, oak, white grapes, passion fruit, sour, medium strength of flavor.
Feel- Between thin and medium body, average carbonation, mildly mouth coating, moderately dry finish, sour.
Overall- Pale straw in color with moderate haze and below average lacing and head retention. Bouquet was floral, oak, brett and lemon zest with between weak and medium strength. Flavors were peach, lemon, oak, white grape and passion fruit with medium strength and an abundance of sourness. Feel was moderately dry at finish with between thin and medium body. Overall this was an enjoyable beer that deviated from my normal style choices. The one constant I find with this brewery is that the pricing far exceeds the quality.

so intelligent, these guys are killing it, but especially for me with the wild stuff, this was amazing to drink at the brewery. pretty peach colored liquid with a little haze and a lot of big soda bubbles collecting in an inch of airy white lasting froth, sexy in the teku. it smells real complex, a cool mix of modern hops, the phantasm and white wine elements popping, and the passion fruit largely fermented out it seems but adding a little characteristic tang and tropical note, so heady. the ferment is what makes this, and a lot of these for anchorage, brett to the dome, a melon note there, farmy and not acidic hardly at all, oaky and mature, vinous as much as anything. the flavor is so good, the hops bring no bitterness but make it fruity even before the actual fruit does, galaxy leading the way with a lime leaf note thats exacerbated by the phantasm and uniquely also by the brett, hints of lemongrass and lemon zest, cantaloupe, tangerine, honeysuckle, white tea, and light vanilla. its dry but the wood slows it way down and draws it out, mild tannins as it warms, the passion fruit is natural and subtle, almost works like the phantasm here to highlight the hops. amazing texture too, effervescent, wheaty and fluffy, and dry as a bone. amazing what these guys are doing, with old world processes and new world ingredients and innovation, its at such a high level. i was skeptical of the passion fruit in something like this, but it really adds a lot. cool for spring, world class quality! i need to find a bottle...

375 mL bottle. Slightly hazy yellow. Smells of passion fruit, earthy Brett, oak, and tropical fruit hops. Tastes of strong earthy Brett that almost overwhelms the acidity of the passion fruit. Lightly tart, mostly earthy and funky. Chewy hops in the back end. Medium light. Pleasant enough, but doesn't quite come together like other Anchorage beers.
