This is the next beer in our bladesmith series of beers. This delicious IPA was brewed with my friend Mareko Maumasi of Maumasi Fire Arts. Arguably one of the best chef knife makers in the world, he flew up to Anchorage to help me dial in my skills as a knife maker. Check him out at @maumasifirearts on Instagram. His work is incredible! With this IPA we used a few new hopping techniques and also tried some new techniques with the phantasm powder, the result is one of our best! It was DHH with Riwaka, Nelson Sauvin and Mosaic Hops. The amazing art was by Rob Bowyer. He did a great job capturing the Maelstrom Damascus pattern on one of Mareko’s knives you can see in the second image.

Pours a semi-clear golden color with a small head. Aroma is stone & tropical fruits. Taste is mild fruits and sweetness, no real hop bitterness. Very easy drinking and unique.

Hazy, yellow color. Medium-sized, white head,. Citrus, melon, and peach in aroma. Moderate sweetness in taste. Light bitterness at the end. Good.

Poured from 16oz can into a dimpled mug. Canning date appears to be 9/14/23 … perhaps not too bad, but again, a lesson to check dates at the store before buying.

Appearance: medium golden hue with a moderate haze and a finger of frothy ivory foam.

Smell: sweet malt with rich, tropical, candylike aromas of orange, mango, and passionfruit. Okay, maybe age ain’t nothin’ but a number! This is a damn fine-smelling beer.

Taste: tropical, like the aroma, but with more earthiness and less candylike juice: passionfruit, again, but also more of a guava/papaya like thing going on. Maybe thiol-boosted New Zealand hops are simply ageless. The flavor isn’t quite as striking as the aroma, but overall this is right up my alley; especially the aroma/flavor differentiation.

Mouthfeel: meidum body with a decent carbonation and creaminess.

Overall: a really, really interesting beer. I like this a lot. I feel like it is at once a good February read-a-book beer as well as a lovely beach quaff.

16oz can at share. Hazy yellow golden pour, small frothy white head. Aroma is light citrus with some floral aspects. Taste is fruity, zesty, tropical, almost creamy feel

From "The One" subscription pack from Carwyn Cellars, December 2022. Drunk in January 2023.

L: Thin-looking, hazy, light yellow. Moussy white head. Carbonation is visible in the thin end of my IPA glass but not in the larger bowl part.

S: Big notes of pineapple, guava, tangerine and papaya - the veritable tropical fruit basket...

T: The taste very closely approximates the smell, with pleasant hoppy bitterness rounding things off nicely. There's the slightest dieselly hop burn present but it doesn't detract.

M: Mouthfeel is more carbonated than I'd have expected, and carbonic prickle is similarly high. It's not offensive at all, but I had expected something smoother.

O: n enjoyable IPA on the sweet end of the spectrum. Apparently brewed with thiol-boosting yeast, phantasm powder and "rare" Riwaka, Nelson Sauvin and Mosaic hops. I assume that last bit is a joke, but for a beer that was just over two months old when I got to it, it hasn't lost too much of its aroma or flavour, so perhaps the thiol boost and phantasm did their job...

Poured from a 16 ounce can into a tulip glass.

Look- Pale straw, sudsy white head, moderately hazy, no visible particulate, average head retention and lacing.

Smell- White grape, floral, melon, between weak to medium strength of scent.

Taste- Melon, pear, clementine, medium strength of flavor.

Feel- Medium body, moderately creamy, soft, mildly prickly, average carbonation, mildly mouth watering finish.

Overall- Look was a nice pale straw with a medium amount of haziness. Bouquet had good scents, but it was a bit weak in strength. The flavors were interesting and enjoyable with a medium strength. The body was more substantial than I thought it would be with an appealing soft and creamy feel. Overall this beer was an enjoyable experience with an interesting flavor profile.

I hate when there a couple dozen beers with the same name. Pale color of a mix of lemonade and orange juice. Not a bold beer, but plenty of citrusy flavor; a very nice body, and very enjoyable.

aqnother great hoppy ipa from a great brewery never had a bad beer from them refreshing and smooth to drink hop fllavor in every sip
