Fermented in foeders with saison yeast, brett and our house mixed culture. Finished on pineapple and dry hopped with Nelson sauvin and Citra hops.

Hazy, yellow color. Nice, white head. Citrus, pineapple, and earthy brett yeasts. Dry, hoppy,y, and subtle . Good.

i know their stouts, barleywines, and hoppy stuff is all the rage, but for me its their funky bretty stuff that stands out as the most special of what they do, and this is a cool example of that, a bretty tangy thing done with pineapples and dry hopped pretty prominently. pale straw colored with some body and just a little haziness, average white head from the tap with obviously high carbonation. the aroma is lovely, candied and dehydrated pineapple to me, less sweet than it seems like it would be, faintly herbal and lemon from citra and nelson hops, more of the former than the latter to me, but the pineapple changes them both. barnyard funk but also kind of new, less oak than expected, but some obvious white wine character, a little bacterial pucker, and maybe faint white pepper saison yeast character, but its brett first to me. the flavor is summery and quite juicy, the pineapple fresher now, slightly acidic, but also sweeter than in the aroma. i get green apple, banana, and chamomile here too, all seemingly from the pineapple but a little bit enhanced by the musty brett. a bit more wood as it warms, pils type malt underneath but staying really light. nice rushing carbonation, moderate acidity to finish, balanced by the leftover sugar from the fruit, definite sauvignon blanc vibes too, and a pleasant slightly sweet and tropical aftertaste, no bitterness at all from the hops but they add wonderful complexity and modernity to the back end. real cool beer, these guys kill it with this stuff, and drinking it at the source was a treat!'

edit: i liked this even better from the bottle, these are spendy but worth it. more carbonation and of a different character, must be bottle conditioned and that matters a lot in a beer like this. also it seems even drier than it did on tap, this brighter and more alive overall. wonderful stuff, increasing a few scores to reflect the bottle format superiority.

375 mL bottle. Cork is a nightmare to pull. Cloudy yellow, but has carbonation. Smells of Brett and pineapple. Tastes of Nelson hops up front, Brett, earthy yeast, a little bit of pineapple in the back end. Low carbonation, mildly tart. Pretty tasty.
