Drank from a 12.7 fl. oz. / 375ml black wax dipped bottle purchased on Tavour
V.1 (Red)
Served in a tulip
The beer poured a super oily and dense, completely pitch black. There was no true head nor any lacing. A thin film of larger sized, caramel colored bubbles topped the body, but it quickly dissolved.
The aroma was super boozy and lacked some complexity initially. Punchy bourbon notes dominated. Licorice also came through strong. As the beer sat, the nose became more interesting. Dark fruits were apparent as well. Nice sweet-savory balance. There was a dense caramel candy and milk chocolate presence too. Vanilla and brown sugar notes were also detectable. Later, both the dark fruit and vanilla notes intensified.
The flavor profile was similar to the nose but more interesting and complex. It was super malty and robust up front. Excellent melding of caramel and roasted malt notes. Nice dark fruit character in the center. Charred raisin, plum and fig notes came to mind. Excellent sweet-savory balance. Boozy bourbon notes appeared as the beer moved among the palate. Roasted malt notes reappeared on the back end, along with some smokiness. More boozy bourbon barrel character and sweet vanilla in the finish. As the beer warmed, some chocolate notes and a honey-like sweetness came forth.
The mouthfeel was definitely the most impressive aspect of the beer. It was super oily and dense. Full bodied for the style. The liquid contained a fine, tongue blanketing effervescence that turned creamy, frothy and slick on the palate.
Empathy is an intense and complex imperial stout that got better throughout the session. If the roast and booze were toned down a bit more, this could have been even more amazing.

Pitch black opaque body, brown head that slowly settles into a thick collar. Smells of bourbon strongly, with semi-sweet chocolate, smoked honeycomb, molasses, mild vanilla, and flakes of char. Taste blends the barrels with big molasses, rich chocolate fudge, honeycomb, with tones of smoke, char, and a rounding out slight note of wet earth. Feel is very smooth with great barrel character, rustic and boozy tones are so inviting to the drinker. Much better than expected as I thought the honey would over sweeten
