Served in a standard shaker pint, this one has a warm, transparent chestnut brown color topped by a modest eggshell-white head. The aroma is subtle but alluring, with a fresh, sweet combination of cherries and dark caramel. The flavor is more rich and heartily grainy, with an almost barley-wine-like profile that features a big earthy and spicy hop character that pushes the malty fruitiness towards the background. The mouthfeel is slightly drying, the sharp but fine carbonation is a bit aggressive, and there is a noticeable alcohol character, which all combine to detract from the interesting flavor profile. In the end, though, the somewhat well-balanced, complex flavors make this beer quite satisfying.

First had at the Bull City Burger and Brewery, Durham, North Carolina, on draft into mug. Good example of the style, Regulator Doppelbock is a nice complement to the excellent burgers on offer there.

on tap at BCBB into a tumbler

Appearance is a clear dark amber with a small off-white head. Very red and fairly light colored for the style. As seems to be the case for the style, the head goes away pretty quickly leaving a small ring. A hint of lacing at the top of the glass. The nose is that of light continental hops (spiciness), dark malts, and a subdued sweetness. Taste is fairly malty (dark malts) and hoppier than a German doppelbock. There is a very slight hint of something flat/stale in the taste that is preventing this beer from greatness. Has a nice light bitter finish. Mouth feel is med-heavy weight and features some of that doppelback metallic feel.

Overall this beer is less malty than Optimator, less metallic/soy saucy than Salvator, all the while being hoppier than both. Sorta what I imagine an American doppelbock to taste like. If it wasn't for the slight off taste, this would be my favorite doppel by far. A solid beer in its own right and quite drinkable for the abv.
