this one sure is weird! built like a belgian strong golden, using heaps of honey to crank the gravity, and then oddly soured later on, intriguing and tasty, i love how unique and sort of organic and original everything these guys brew always is, such an underappreciated operation! a pale colored brew, looks viscous but still kind of delicate, honey colored, which makes sense because this smells like wild funky floral honey right away, sweet like rock candy and intense like dried wildflowers and orange peel, thick and summery and awesome. some light vinegar sourness too. its cool how dry the beer is when i taste it, like the honey flavor is still really prominent, but it doesnt make this sugary. maybe that was the motivation of the souring, which seems post fermentation and sort of still getting started, acidic but purely bacterial, not wild at all to me and sort of new despite the ageing, but it works great to both cut any residual honey sweetness and to preserve the honey flavor. its delicious really, even if the sour note is a little acetic and a little sharper than it could be. highly botanical and almost healthy feeling, clover and dandelion notes, lemon acidity, and lots of body. cool beer, a sipper not a crusher, but another interesting and well done beer from these guys. i love what they do!
