Impeccable head retention.
Aroma is deep and sweet, with chocolate and brown sugar atop bourbon and coffee. Hints of red grape and vanilla round out the profile.
Much thinner on the palate, and far less sweet. Coffee dominates, really building to an earthy, grainy second half that is among the most coffee-prominent beers I have ever had. Touches of cream, and mildly sour mash. A touch nutty as well.

As Omnipollo AON Bourbon Dry And Wet Fermented High Altitude Ethiopian Coffee Bean. A 330ml bottle, bottled on 8th June 2018, and with a best before date of 8th June 2019. Poured into a snifter glass.
Appearance: Black in colour with a thin mocha brown head that dissipated quickly and left some nice spotty lacing.
Aroma: Roasty malts, chocolate, brownies, coffee, vanilla, a light nuttiness and just a hint of bourbon.
Taste: Lightly sweet, roasty malts, chocolate, coffee, vanilla, and a hint of syrupy caramel. Light bitter finish but I’m not getting much bourbon here.
Mouthfeel: Creamy, sticky, full bodied with soft carbonation.
Overall: Very nice roasty flavours but only light coffee, and I’m not getting much or any of the supposed bourbon notes. Still tastes great overall though.

this aon series has got quite a few crazy beers in it now, this is my favorite of them i have had, although i havent had many. its a cool project, huge stouts with unique adjuncts. this one features some special ethiopian coffee that has apparently been both wet and dry fermented. i am no expert in coffee processing, but the coffee impression on the beer is incredible, and of the recent beers i have had from these guys, it was hands down my favorite. so many of their big stouts are too sweet to really drink much of, and while this one has some residual sweetness to it for sure, its more mellow than a lot of them in that regard, and is so complex, round, rich, and flavorful, that i dont want to set the glass down. near black in color, predictably viscous, with a huge mocha cream head on it, easily reinvigorated with just a little twirl of the glass each time it settles back. aroma of beautifully complex coffee, tobacco and cocoa notes to it, minerals and faint smoke, combine well with dark malts here, bitter roast, fudge, and a hint of vanilla in there against the earthy depth. the coffee is just insane in the flavor, so full and interesting, subtle black cherry, rum raisin, and bourbon notes all through it, warming from the coffee not the alcohol, and fluffy feeling like drinking a storm cloud. honestly one of the coolest expressions of coffee i have known in any beer, a cool showcase of some obviously absurdly high end beans, id love to drink them on their own, but the beer is a great vehicle for this flavor profile too. it almost has a fire roasted thing going on. exceptional beer through and through, ill look for more of this aon variant!
