Moderate, delicate but certainly not bland, Onmipollo's northern German styled sour ale hosts a velvety vanilla cream and coconut character to go along with the wheat but also a fruit tartness to assist the natural souring power of lactobacillus fermentation for a tandem of taste that's sour but not without support.

Bianca Lemon Coconut pours a hazy, canary straw and shrouded in a diffused hazy glow. A creamy sheet of foam rises, filling the nose with jaw-tightening aromas of citrus, apple and tropical scents along with a gentle waft of sea air. Its taste is medium sweet with coconut cream, lemon curd and a mild tangy sweetness of sweetheart and warheads candies.

Its sourdough and pastry breadiness drops slowly from below and allows the tartness and lemon flavors to command the middle palate. Lactic fermentation provides the piquant taste of juicy lemon with semi-dry cider, chardonnay, kiwi, honeydew, gooseberry and under-ripened berries. Its lemon additions give a slightly sweet citrusy flare to the taste that reads like lemon meringue throughout the session.

Crisp, clean, and full for sour ale, the beer's refreshing taste is easy on the palate although with the added weight. Creamy and acidic, its highly flavor and mouthfeel trails long and lean in aftertaste with a finish of rounded sea salt and a soft afterglow of sourdough and pastry in a lasting memory.

Unsure of the canning date. Looks like sparkling apple juice, there was a very modest off-white head that faded very quickly leaving no lacing or suds/foam on the surface. Sporadic carbonation bubbles. Smells like a cinnamon babka and apple pie to me, it actually smells like the inside of Ikea. The taste has more lemon and slight coconut presence but it has a distinct sweetness/tartness to it, i still taste more apple than anything. On the fuller side but starp carbonation and a sweet finish.

16 ounce can into tulip glass, canned in 4/2019. Pours slightly hazy/cloudy medium golden yellow color with a 1-2 finger dense and rocky off white head with fantastic retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy/tart/tangy limes, coconut, citrus zest, lemon, orange, peach, pear, melon, apricot, red/green apple, white grape/wine, sea salt, hay, straw, grass, vanilla, cream, wheat, cracker, white bread dough, light peppercorn/lacto funk, and yeast earthiness. Damn nice aromas with great balance and complexity of limes, coconut, fruity/acidic yeast, lactose, and pale/wheat malt notes; with great strength. Taste of big juicy/tart/tangy limes, coconut, citrus zest, lemon, orange, peach, pear, melon, apricot, red/green apple, white grape/wine, sea salt, hay, straw, grass, vanilla, cream, wheat, cracker, white bread dough, light peppercorn/lacto funk, and yeast earthiness. Light-moderate fruity/lactic tartness, fruit tang, and light spiciness on the finish. Lingering notes of tart/tangy limes, coconut, citrus zest, lemon, orange, peach, pear, melon, apricot, red/green apple, white grape/wine, sea salt, hay, straw, grass, vanilla, cream, wheat, cracker, white bread dough, light peppercorn/lacto funk, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of limes, coconut, fruity/acidic yeast, lactose, and pale/wheat malt flavors; with an awesome malt/tartness and tangy fruit balance; with zero puckering flavors after the finish. Light-moderate increasing dryness from lingering tartness and tangy fruit. Medium carbonation and medium-plus body; with a very smooth, creamy/silky/grainy, fairly acidic/tangy, and lightly saline mouthfeel that is great. Zero warming alcohol for 6%. Overall this is an awesome fruited milkshake gose. All around awesome complexity, robustness, and balance of limes, coconut, fruity/acidic yeast, lactose, and pale/wheat malt flavors; very smooth and refreshing to drink with the mellowly acidic/tangy/drying finish. Great soft feel, not overly lactic/salty. Perfectly balance between juicy/vibrant limes, coconut, salt, Lacto complexity, lactose, and pale/wheat malts against acidity. Mild residual sweetness with lingering dryness. A really enjoyable offering, and spot on style example as expected.
