Look: slightly hazy golden yellow. Nice big off white head on the pour that settles to a modest top. Messy, clingy lacing.
Smell: brightish, creamy peach.
Taste: much like the nose, a bit drier than expected, a hint of bitter.

There's a whole new generation of IPA lovers who didn't like IPA back when they were bitter. And for those, Omnipollo has a lineup of beer just for you- a triple IPA series with white chocolate and milk sugars set upon a hazy IPA base style. Sure, you may have to eat it with a spoon, but it is an IPA at its heart.

Straight from the dessert shelf and into the beer glass, Ice Creamy White Chocolate Peach pours a rich golden-taupe, cast in a matte finish and displaying a depth of silt before resting underneath a blanket of light khaki froth. With a pass of the nose, the senses are woken by orchard fruit, sweet cream, cereal and botanicals. Very sweet in its initial sip, those cereal flavors wrap around a host of creamy malt flavors that resemble condensed milk, heavy cream, pulled candy, pastry dough and cereal.

As the hops open up on the middle palate, its more citrus influences arise, bringing a rich taste of orange, red grapefruit and lemon with a followup of mango, pineapple and passionfruit. Like a beery form of sherbet, the creaminess invites an insinuation of white chocolate as a vanilla-heavy counter part keeps the session smooth and creamy, just like creamsicle.

With a lot of patience to fade, the rich cereal quality keeps the creamy fruit flavors elevated but hinders refreshment and drinkability. With an impression of cuacao liquor and gin spices, the finish teases with a botanical balance as hints of tea and spruce come about. But anything that resembles white chocolate is that of a belini with a scoop of peach ice cream.
