This sour wit is the second beer in our Conversion Northwest Sour Ale series. It is a white beer that is brewed in the farmhouse tradition and opened to fermentation from a variety of wild yeast and lactic bacteria. The Conversion series represents our transition to wild ales; tart and juicy with lots of traditional farmhouse goodness - Our conversion to the wild side.

750ml bottles, expired a couple years ago!? Not sure how my buddy still had this, but let’s not waste it. While I would usually not review this, I think a sour will age perfectly fine past the bottled date.

Pours a finger of white head into my Teku taster, fizzes and fades quickly, but leaves a solid rim of foam. Initial lacing looks pretty poor. Body is a golden yellow, pretty clear but not crystal clear, with a good amount of nucleating bubbles coming up. Looks ok so far.

Nose is slightly tart, but definitely leans more towards the estery wild yeast aromas. Notes of lemon and bubblegum. Smells a little sweet, but not overly whatsoever. Very lovely nose.

Flavor is considerably different. Very sour up front, with a touch of those lemon and bubblegum esters playing in the finish, noticeable peach as well. This is a solid sour base with some subtle esters clearly represented. Not personally my favorite style, but this is a nice twist.

Mouthfeel is mostly tart and dry, but has a touch of sweetness in the finish. Carbonation is through the roof. Body is very light. Bitterness is not apparent. Decent, pretty good for the style.

Drinkability is not super high, but the esters make it pretty palatable compared to some others in this style.

Appearance turned out poor, zero lacing, not surprising for a sour. The temporary rim of foam was nice.

Overall a solid sour with a nice supporting cast of esters.

I love the feel of this sour. Oaky, smooth and light on the palate. Aromas of oak, hay, pear, honeysuckle, grass and lemon. Taste has all of that with a lightly and buttery sour backbone. A fine ale

Pale, hazy yellow body; fizzy carbonation, head disappears completely (not even a trace) after a few seconds. A nice sour apple smell. The taste also brings tart, sour apple flavors. Medium bodied; crisp, and acidic; juicy.

An okay wild ale if a bit one-dimensional. It delivers a lot of sour apple qualities but that is it. No perception of wheat is to be found. The lack of any lasting head is also disappointing. Not much depth with this one, but if you like sour apple flavors, it's worth a try.
