This sparkling wine inspired addition to our Spontaneous series features our traditional recipe aged with Gewurtztraminer grapes and Riesling juice from White Salmon Vineyards in Underwood, WA. 1 and 2 year old French Oak casks were carefully selected for fruiting, and blended with some young beer for refermentation in the bottle.
Notes of white grapes and gooseberry mingle with a subtle oaky spice to compliment the refreshing acidity and subtle funky brettanomyces complexity.

Clear moderately bubbly gold with no head. French oak sets the table for the white wine, grapes, must, and lingering funk. Taste is juicier and sneaky tart, very grape centered, funk is there but lighter. Very vinous, juicy, with must, oak tannins and lighthearted funk. Want the taste to reflect the nose more, but a good beer nonetheless.

L - Champagne like, down to the bubbles (slightly larger); crystalline.
S - Grapes, grapes, and more grapes with the definite sour/bruise smell of a good wild ale.
T - Phenomenal; balanced sourness, not over the top, definite presence of Gewurtz/Rielsing add-ins (esp. gooseberry taste)
F - Fabulous mouth feel; prickly, not overly so.
O - One of my fave wild ales all year (2019).

Pale saturated yellow orange. Minimal spotty lacing.
Acidic aroma, oaky and fruity with noticeable white grape presence.
Tart and crisp, fruity white grapes. Oaky with a touch of gastric acid.
Light to medium bodied. It’s pretty drinkable, though the acid gets borderline overpowering to really drink much of it.

the first fruited variation of their lambic type wild beer that i have seen, this with sauvignon blanc grapes in it. it looks a lot like the original sponatne wilde, obviously not much color contributed by the fruit, still pale straw colored and lively in the glass. the aroma is a little less lambic-esque to me, i get a sharpness from the fruit that increases my perception of the sourness beyond that level, mouthwatering and intense, still funky, still obviously made with aged hops, but with a bti of a different fermentation complexion, maybe some wild elements on the grapes in the mix here as well. the fruit is very fresh and the beer very mature, a cool back and forth between them throughout this, but its also not overly fruity, fermented down to dry and with full respect given to the base beer, the fruit is merely an accent. great mineral profile to this with the oak, almost a brine or something, dry and tart and interesting and with quite a bit of body. some classic lambic funk coming in as it warms up, a white cranberry tang as well. really pleasant and well done beer, glad to see a little differentiation of flavor in one of these classically style methode lambic types. i love these guys, they get me every time! I could see this being absurd with peaches...
