This is an American Strong Ale that has elements of Russian Imperial, Barleywine, Double IPA and Strong Belgian. Not as roasted as a RIS, not as malty as a Barleywine, not as hoppy as a Double IPA and not as much candi syrup as a Belgian Strong. The 86 IBUs from Polaris, Zythos and Nelson Sauvin hops are enough to balance the 9.3% ABV without being overly bitter and in this version we added roasted Serrano chilies and Mexican chocolate.

Appearance: Very dark brown, near black body with a slim, sandy head. Thin, glass-coating lace.
Smell: The aroma is led by a green, vegetal chile quality, then, some sugary-hinting dark chocolate syrup, roasted malt and coffee.
Taste: As with the nose, vegetal chile upfront. Dark chocolate, roasted malt (scantly astringent). Licorice, phenolic spiciness. Citrus, lightly resinous, its hop bitterness tangled together with the pepper spiciness and alcoholic heat. Slight dark chocolate quality, with a bit of sweetness sustains throughout the spicy, warm, bitterish finish.
Mouthfeel: Medium-full body. Medium-light carbonation.
Overall: They had me right up until the Serrano chiles part. Still, I will say it's very, very good for a chile beer.
