Produced in Italy using the low fermentation method, it is made following the traditional recipe of Bavarian Keller Pils. But its soul is entirely Italian, because the ingredients used to make it all come from the fields of the Farchioni estate in Umbria, or from Italian companies carefully selected and certified by us. A long maturation, typical of the style, gives Cotta 40 a soft and dense foam and fresh notes of freshly baked bread and cut grass. A beer that is easy and spontaneous to drink, because it is balanced and genuine: impossible to enjoy just one glass.

Notes via stream of consciousness: It's poured a hazy golden body beneath a thumb's width of white foam that seems to be holding well. It's got a pleasant grassy aroma to it that reminds me of walking through a field after a light rain in summer. There's some breadiness to it as well, and it's fresh and welcoming. The taste follows with additional grainy maltiness and a light touch of apple-like fruitiness. A firm bitterness balances it and brings it to a dry conclusion. It's a little more acidic than I'd like but I'm a brewer and I pay attention to these things whereas most people have no clue. In the mouth it's medium bodied and gently crisp with a moderate, fine-bubbled carbonation. The head has held up well, and the fluffy lacing left behind on the glass is nice. I'd welcome a little bit more hops but it's certainly more hoppy than most Italian pilsners. It's nicely balanced and easy to drink.
