Foeder Coupage Blend #2 is a 50/50 split of foeder saison and a blonde ale dry-hopped heavily with Mosaic and Amarillo. Blended and packaged in green glass 375mL bottles and kegs, where it has been naturally carbonating since June 2020.

Cellared a year. Murky bright yellow pour with a white collar. Upon the first sniff I get lime pith, barrel funk and bright oak, but as I smell more pear, apricot and lemon zest supporting. Taste stars lime zest, lemon juice, pear, bright oak, with light hearted funk, dry earth, and a whisper of grass. Light and funky feel, carbonation is high, bright body, creating an effervescent impression, finishes much drier than it started.

This is surprisingly smooth and refreshing. It has a slight sharpness that make it tart, but overall, very nice.

375ml green bottle. No dating information found.
Cloudy, pale straw colored body. When poured there is a slender finger of white head, but this recedes after a couple of minutes to a partial cap. No lacing.
Aroma has a fruit combination of apricot, pear, and apple. Has a tanned leather component.
Taste is slightly tart. Oak wood wraps the apricot, apple and peach fruits. Quite dry in the aftertaste.
Medium mouth feel. Good carbonation.
The taste profile is short lived because of the inherent dryness of the brew. The yeast does bring it close to a tanned leather flavor, but the hopped fruits blend in well. Not bold but quite pleasing overall. Tart and oak are balanced, as are yeast and hops. Subtle results from the foeder. The lasting flavors in the mouth are the oak and the yeast.

Hazy straw yellow with a short white blanket that recedes quickly to a thin bubbly ring.

This beautiful saison exhibits a perfect balance between all elements. Its pear, apricot and yellow apple-like qualities are very bright, even coming along with hints of passion fruit, yet all reduced down to a super drinkably low acidity, exhaling honeysuckle.

The medium body has a firm fluffy fizz and finishes tingly semi-dry.

poured from a 375mL bottle into a snifter. pours a semi hazy gold with a finger and a half of soapy white head. aromas of ripe muskmelon, lemons, subtle orange and musty oak. flavors of lemon, grass, oaky funk and cantaloupe. it’s so easy drinking. if it has any tartness or sourness, it’s so pleasant that i barely notice. the hops add a fruity, almost dank element while the fresh beer adds lemon and grass and the foeder-aged beer adds a funk. a light, effervescent (champagne-esque) mouthfeel around out a lively, lovely drinking experience. i can’t get enough of this beer. blend 1 was fantastic and so is this. a crushable saison that never gets overly tart nor overly complex but maintains enjoyable drinkability throughout the duration of the entire bottle.
