Rullquin au café d’Éthiopie is the result of a collaboration with Rich Soriano and Parlor Coffee Roasters. Beer of mixed fermentation, it is obtained from a blend of 7/8 of Rulles Brune and 1/8 of 1 year old lambics, which has matured for 8 months on oak barrels. Ground coffee from Ethiopia was infused into the blend for 24 hours before bottling. Unfiltered and unpasteurized, this beer is refermented and matured in the bottle for 1 year
