A dark brown colored beer with a soapy head which settles into a small layer of foam.
Smell of dark chocolate, bakers chocolate and a spicy, clovy, juniper and herbal character.
The taste is full and has a mostly chocolaty taste with ripe red fruit and clove and juniper are present. The yeast character is somewhat subdued and offers a medium complexity to the beer. In my opinion the yeast is a little too much bubblegum and winegums and the beer could improve by adding another (Belgian) yeast. The bitterness is low and according to style. The body of the beer could be a little less full, giving way to the drinkability of the beer. With some small changes in the recipe, this beer could improve a little more.
