Using hops sourced from German farms, American Pilsner malt, and hand-selected fresh or ‘wet’ hops, Speed Castle is a crisp, refreshing and world-ending Pilsner.
A pilsner named after our favorite White Castle and Speedway located a mere 2 blocks from the brewery. This crisp, refreshing lager was brewed with a single hop variety, Spalter Select, a relatively new hop (1993) bred at the Hull Institute in Germany. The particular hops we used are unique due to the fact they are still “wet” or fresh. They have not been dried and pelletized. Instead they were picked fresh and processed in a way that the fresh hop character is preserved.

12oz can served in a willibecker. Pours a light orange hue with a fizzy, half inch, bright white head. Clarity has a slight haze. Nose is floral/spicy/herbal. Taste follows nose with a malt profile that is fuller than anticipated. Mouthfeel is light in body with a crisp carbonation. Overall, pleasant and drinkable and pairs well with food.

Nice 3F spin on a classic style.
Great golden tone with a 2-finger head with Rorschach-worthy lacing. A little more carb release would be welcome. -edit : carb released seemed to increase as it warmed.
Noble hop aromas don’t wait to be discovered - they’re roiling and find their way welcoming you before the pour is completed.
Hops too forward then are doused by the bread and candy sweetness only to reignite in the finish - yes, not normal.
Medium mouth which could have been help by that ex carb release.
Overall very enjoyable. Maybe pushing the envelope of the style but that is 3F.

Poured into a Bell's branded nonic pint glass
Look - Pours a thick and fluffy off-white head that leaves lacing. Cloudy, pale yellow appearance with a decent amount of streaming bubbles.
Smell - Aromas of grass, herbs, lemon citrus, bread crust, caramel malt.
Taste - The citrus seems to dominate the taste, and there's a small amount of bitterness in the aftertaste.
Feel - Medium bodied with a semi-crisp mouthfeel and finishes kinda dry.
Overall - A very hopped up pilsner that's quite drinkable.

12 oz can poured into a wine glass. Not super adventurous or "world ending" for an American pilsner, with a decent level of hoppiness but nothing crazy, especially coming from 3 Floyds. Moderate bitterness, crisp malt base, some hoppy citrus and grassiness. It's decent.

Did you want a classic clean pilsner? Well...this is pretty much that. Yeah, bit hop forward and for me I think it's a bit sour. But not enough of either to really go with this "It's not normal" logo. So how do you score a to style pilsner? I guess it's basically average.
If I had to quibble, it's a bit cloudier than to style without really doing much for me. Head is for beer in general thin. The beer is refreshing but it's a hot 90 degree day and it's about a 7.5 out of 10 on refreshing...I'm looking for a solid 9 from this style.
This is a nice tap room at 3 floyds on a hot day beer. We don't need it in mix packs or sold outside of a hot day at the brewery where this is just what the doctor ordered.

Pours a clear yellow. Thin foam. Sour aroma. Earthy hop body. Light and crisp. Easy drinking. Slightly sweet finish. A solid pilsner.

Poured from a can into a pint glass. Pours yellow orange with a fluffy white head. Smells of sweet wheat and grain. Tastes of sweet wheat and fruit. Beer is light bodied and easy drinking, good carbonation. Overall, a very good beer.
