Barrell aged mixed-fermentation farmhouse ale aged on second use Maine-grown peaches, grapes & cherries.

A slight peach tint is added to the almost clear appearance (SRM-3). A fluffy white head holds 1" for a minute before falling to a 1/8" blanket. A single column of fine carbonation kept it lively. Occasional spots of lace form on the Pretentious Glass Co. American Lager Glass. Adding yeast, along with the last 2oz adds a light haze and allows a ton of Belgian lace to form.
The aroma has a pleasant blend of fruity/floral funk. Mild sour peach and light pepper are evident as the horse blanket comes and goes. Adding yeast made no real impact.
The flavor is much mor sour than the aroma had suggested. Sharp tartness is followed by sweetness one full step lower. The flavors are delicate peach and grape, with oak coming into focus. Once noticed the oak can't be ignored. The finish is long and dry with light lavender and coriander. Again, the addition of yeast made no noticeable impact.
The body is thick and light, with a soft scratchy texture almost like fine batting. Carbonation has a prickly effervescence and alcohol is as expected.
This is a peaceful, dare I say "imperial" Saison. Certainly, it is appropriate in the Wild Ale category, and well done at that. Still a comparison to Saison is appropriate. I am enjoying it while watching the Bills squish the Fish. In fairness, the Dolphins made a game of it.

Bottle from B&B in Portland. Pours an opaque/cloudy pale yellow with a pinch of orange and a flash of white head, smell is sweet peach flesh, peach pie filling, sour peach skin, sour green grape, hint of cherry, vanilla, and grass, taste follows with sour peach sorbet, green grape flesh, mild grassy funk, mildly tannic grape and cherry skin that lingers, feel is light, minimal carbonation, high acidity. A sour fruit pie treat.
