Hello Beautiful is a wild ale re-fermented with Georgia blueberries with multiple strains of Brettanomyces and native microflora. Sauvignon Blanc barrels provide a beautiful home for all of that microfloroa and local fruit to shine. Pair this one with sharp cheeses, kimchi or great friends.

500mL bottle picked up from The Garage. 10.00. 2018 release. Served in a Monday Night snifter. Enjoyed 4/5/18.
Pours a brilliant pink with two fingers of pale pink head. The pink froth crackles away quickly, leaving a thin blanket of bubbles that spread to a full ring. Even that retention fades to a thin, broken rail with neither lace nor bubbles on the surface.
Smells of white wine, soured malt, berries, funky wet wood.
Tons of funky Brett presence in the flavor. Farmy wet wood, old bread, indistinct berries, grape skins, citrus compost and some grassy herbal element.
Fairly full bodied, dry feel with dull carbonation. That recurring farmy wet wood remains through the finish with notes of Brett, chalky berry and
I continue to seek out these fairly prolific releases from Monday Night’s new Garage facility. Hello Beautiful is more Brett and barrel than berry but ultimately enjoyable.
