4 pack [to be consumed on 4 different days] of 12 oz cans from the brewery's taproom in Brevard NC.
Appearance. Near black and opaque body with a decent beige head.
This is a highly flavorful whisky barrel aged brew in which the barrel aging effects are secondary to the chocolate. This is loaded with chocolate that's nicely supplemented with notes of cherries, whisky, faint wood, dark dried fruits and vanilla. The high ABV is partially hidden, being most noticeable in the flavor and least obvious in the nose. As the label proclaims, this is a "sweet stout".
Overall. Works well as a dessert beer. Likely to improve with some aging ... November 2022: no notable improvement yet. .. but better in July 2023.

Very nice reddish tan head and walnut body. Smell is very pronounced bitter chocolate and caramel, with marshmallow and graham cracker also present. Taste is surprisingly acidic, with chocolate and caramel upfront followed by very sweet cola and cherry, then becoming coffee with hints of graham cracker. Moderate carbonation, with a slightly oily mouthfeel. Overall, this might be the sweetest beer I’ve ever had… the nose is great, but the body is so cloying I’m not sure I can finish a 12 oz can. Oskar blues calls it an ‘imperial sweet stout’ so if you’re looking for a desert stout on steroids, I think this is it.
Update: adding some whisky evens it out very nicely. Wish me luck in the morning.

12oz can, ruby tinted opaque black with a mocha-colored head that fizzles quickly to nothing. Strong boozy component with a whiff of spice, not sure if that’s adjunct or whiskey barrel? Cherry is very present in the palate along with the whiskey, kind of a rich tartness combined with the booze. Impressions of cocoa and biscuit (graham?), oak. Overall not my favorite.

L: Pours about jet black with some ruby edges. Dark mocha colored head is very short lived.
S: Sweet chocolate, dark chocolate, and luxardo cherries. Maybe some chocolate syrup. Aroma is very dessert-like. Some tart cherry scents appear after some time in the glass.
T: Taste is very similar to aroma with the addition of some vanilla and a hint of whiskey. There is a suggestion of a cookie or biscuit, which presumably is the graham cracker addition. Decadent fudgey notes in the aftertaste. While this is definitely sweet, for me it's found some balance and never drifts into cloying territory. Also the barrel/whiskey presence is subtle and I think that works well here.
F: Medium bodied. Not quite as viscous as some BA stouts but not thin by any stretch. Appropriately mild carbonation.
O: I'm finding this to be very enjoyable. I think Vol 7 may be one of my favorites of the series this far.

I really liked this one.
Pours black with no head an no lacing.
Tastes of cherry dark chocolate with fig, toffee and a hint of leather. If you look for it, there is a bit of graham cracker in there too. Has a nice medium mouthfeel to it. Nice one.

For those times when you're torn between cherry pie, s'mores and stout, Oskar Blues has a beer for you. Their seventh barrel-aged release of 2021 rolls in the common stout flavors with added graham crackers, chocolate, cherry and whisky for a unique twist on a familiar taste.
Jet black and topped off with a loose mocha-whipped froth, BA21 Volume 7 wafts about with a smoky sweet scent, whisky spice and nuanced fruit aromatics. Bold and robust, the flavors have an immediate impact with a malty sweet tone of blackstrap molasses, brown sugar, honey and chocolate- all of the heavy grilled variety.
Quickly rolling in the more boisterous flavors of espresso, walnut, baker's chocolate and campfire all add a roastier and deeply savory aspect to a slowly fleeting sweetness. Grilled fruits of cherry, berry, grape and plum invite a savory and condensed fruitiness of port and sherry to add subtle complex flavors to a bitter and woodsy finish.
Full bodied, creamy and nougat-like, the imperial stout finishes roasty, spicy and heated with a long and simmering aftertaste of campfire, burnt fruit and peppery whisky.
