Picked up a bottle at Cave à Bulles in Paris on a staff recommendation. This is a big, inky-black stout with a short tan head and thin lacing. It tastes like it's right out of a US craft brewery with huge hops (98 IBU says the label) and a long, lingering cocoa and coffee bean flavor. There's no unique departure from the norm of the style, but it's a great example from this French brewer.

From a bottle into a snifter
Best Before 1 April 2017
IBU: 98
APPEARANCE: A clear brown pour yields a two finger, medium looking, fluffy, light tan head with very good retention. Clear, transparent black body with no carbonation evident. A half wisp and ring remain until the end leaving some great lacing down the glass. Very light body, but nice looking lacing.
SMELL: Lots of bitter dark baker's chocolate, pure chocolate, some leather notes, lots of floral hops, piney notes and sweet cream coffee. Pretty nice really, but not roasty enough.
TASTE: Dark chocolate, roasted malt and leather up front. More flavor after the swallow with pure chocolate, coffee, piney hops and floral flavors as well. Leather and slightly charred malts accompany the chocolate and hops in the bold and lingering finish. A good deal of bitterness hangs around as well.
PALATE: Medium body and medium levels of carbonation. Semi-creamy on the palate, goes down okay and finishes a bit drier than expected. Some alcohol and hop bitterness linger.
OVERALL: This is not bad at all, though the bitterness could be dialed back just a touch. Some good flavors here, and a generally solid drinking experience all around. A better offering than their IPA for sure. I wouldn't necessarily reach for it again per se, but I wouldn't turn one down either. Cheers!
