Belgian Strong Dark Ale
Aged in 7 year old Heaven Hills bourbon barrels
Brewed with Lactobacillus
Wild, sour yeast carbonation unevenly forms around ring if glass. Deep, ruby tented brown. Smells of faint bourbon and strong yeast funk. Mouthfeel is bubbly and lively from the lactobacillus that has a slight weight from the backbone of this big beer. Hints of spirit oak and sour alongside a rich, supportive Belgian malt character. Dominated by the yeast foremost then the bourbon barrel goodness which eventually gives way back to the lacto.
