We just bottled up our latest beer in our barrel aged series, Clocktower - Barrel Aged Stock Ale.
Stock (or Old) ales are an historic style from Great Brittan typically hgher in alcohol meant for storing. These beers were often blended with more mild ales in pubs to the barkeeps or customers liking.
Our version is derived from a traditional English base malt (Maris Otter) along with Wisconsin specialty malts and all Wisconsin Hops. Prior to aging in barrels the beer was 7.5% ABV, very malty and moderately hoppy.
The beer was aged six months in a variety of barrels - bourbon, rye, and brandy; and even a variety within them including Parker (Tapered Stave), Old Fitzgerald, Rebel Yell and Heaven Hill.
Stock this ale away in your cellar, it should age quite nicely!

Rating is for fresh, uncellared bottle.
This one is definitely meant to be cellared for a period before consumption.
It's actually overly-woody and a touch harsh for my taste fresh.
However, the overall flavor and aroma profile is very similar to other fresh overly woody products I've given 4+ ratings to once they have been mellowed out by about 6-8 months at ambient basement temperature.
Conclusion? I'm probably going to try to acquire another bottle or two and do just that as an experiment.
