Poured from fridge temp. Pours jet black with a beautiful light tan/brown head. Good retention. Nose is brilliant. Burnt wood, chocolate, toffee, and gorgeous dark fruit. I could keep my nose in this for quite a while! Taste blows me away. Super smooth and creamy. Getting some smoke, but the bitterness is muted. Getting some burnt sugar, caramel, coffee, chocolate, tobacco, and cognac. The latter is subtle, but adds a wonderful layer of complexity on this stout. The mouthfeel is thick, creamy, and delicious. Overall, this is an incredible beer.

L -- Pours jet black with a lively head that settles into a nice creamy foam that reduces to a thin layer and a rim. Strong lacing throughout.

S -- A nice barrel profile, with vanilla and roasted malt leaning towards chocolate.

T -- Cognac barrel shines brightly here, a slight sweetness melding well with the dark roast. There's a nice, mild earthy hop kick to it. A slight booziness on the back end, but I find it balances well with the other flavors. A little more warmth brought out some nice stone fruit notes as well.

F -- Full, lively carbonation.

O -- A great stout. I had a few cognac barrel-aged stouts in France and I believe they all had a nice combination of sweetness, oak, and booziness from the cognac that wasn't overpowering, certainly not as bourbon barrels sometimes can produce. This, I think, is my second-favorite of the bunch (the best escapes me, my notes not with me), but this is a mighty-fine stout.

Well this is my first barrel aged beer from Brasserie du Mont Salève and well it's great. I've had Founders Breakfast Stout today, I love it and it comparison it was not far to be as awesome (even if it's not really the same thing adjunct double stout // barrel aged RIS)

L - Pitch black with a very nice mocha head. Nice lacing all along the session

S - Nice barrel notes with vanilla, some caramelized apple, chocolate, some booze but in a nice way. As it warms up you get more and more Cognac notes but it meddles quite well

T - Cocoa powder, prunes, earthy hops, some acidity, nice Cognac notes. It has some kick in the back end. Perfect balance. No residual sweetness

M - Thick, fine carbonation, very nice

O - Well that's might be the best French beer I've ever had. A real improvement from the base beer. Great, great great.
