A "wild" Tripel fermented with Brett and Lacto-bacilus . Hmm, sounds interesting, I'll have that. Pours nearly clear, dark gold body, a good-sized white head that settles down slowly. Aroma is quite sweet; lots of banana and candi sugar dominate the nose; some citrus and spice notes follow. No sign of the brett or lacto here expect perhaps a vague lemon tartness.
The flavor pretty much follows suit. It's a sweet banana candy tripel with decent yeast spiciness. Some lemony citrus and a hint of funky, grassy hay. Caramel malt furthers the sugary vibe. Dries out a little in the finish. Generally lacking in overall sourness or "wild" funkiness, kind of a letdown in this department.
Medium-full body; medium carbonation, very smooth, but not as crisp as I'd hoped for the style. Overall, a decent tripel, but the unique characteristics of the wild yeasts didn't really appear much in my glass, and I was left feeling like this could have been so much more.
