Poured into a stemmed Zalto Universal glass.
A: Body is orange to coppery with a very light white head that vanishes quickly. Body is light and crystalline.
S: The biggest profile here is a funky tone of horse blanket, followed by a white wine grape must that resembles a sauternes, presenting some mild oxidation, light citric fruity tones, vanilla incoming from the oak. There's also a herb like tone, flowery that is encompassing all flavors very well.
T: It starts with a wine-like sugary content, confirming some oxidation, but strong bodied with some fruit shining out. In the back, there's a light natural wine yeast kind of thing that puts acidity and bitterness almost up on the same level, recreating a close bone dry finish. I can't seem to detach from the sauternes idea because this beer is highly sweet and oxidized as the wine goes, though not my favorite thing, I can see the value it has.
M: Body is medium. Carbonation is low on the glass but while on mouth it shows more livelihood. Bitterness is medium and acidity is medium high. The finish is almost dry.
O: This beer is quite a thing actually. Marrying together Loureiro grape wine barrels with a wild ale gives you all you need - fruitiness, sweetness, bitterness and acidity. I could easily say that this is one of the best wild ales being done in Portugal. Congratulations Sovina.
