Brewed in collaboration with Kansas City’s famed BKS Artisan Ales, Scarcity Principle is a hazy IPA showcasing Citra Cryo and T-90, Idaho 7, Mosaic and Rakau hops. Fermentation with Cosmic Punch, a thiol-boosting strain from Omega Yeast, creates tropical aromatics and flavors through biotransformation, the development of new aromas and flavors as a result of yeast activity on hop compounds. Massive notes of apricot, blueberry, mango, papaya and red grapefruit leap from this soft, pillowy IPA.

Pours a pale yellow-orange with an opaque transparency. Head is a finger of white foam. Aroma is pineapple, tangerine, orange, grapefruit, and faint resin. It's lead by tropical fruits, which slowly simmer down at the finish. Flavor profile is pineapple, mango, orange zest, tangerine, and light grapefruit. The tropical fruit front finds a little balance in late resin and mild green hop notes. Mouth feel is chalky with a consistent and fine grit throughout. Thickness is medium. Overall, a rindy pineapple bomb with a green backdrop.
