Ale Fermented with Apple Juice, Pears and Elderflowers
Made With: Brettanomyces Lambicus, Claussenii and White Wine Yeast
Like a Brit with a cockney accent, this wild ale is both inspired by English ciders and true to its roots in Belgian farmhouse funk. Secondary fermentation with Brettanomyces, white wine yeast, elderflowers & the namesake fruits results in a tasty bouquet of dry, tart and floral notes. No porky.

2/22/17 - On tap at The Yard on Market Square in Pittsburgh. Surprisingly served in a full pint glass. First aroma turned me off and almost had me sending this back. Hazy hay color with just some head. Had to taste my first DL, though, and got what I think I was expecting from this sour. Not too tart and just the right amount of pucker. Aroma dissipated (or I got used to it) and I thoroughly enjoyed this. I did, however, move on to another option - full disclosure.

The entire 500 ml pours out into a large snifter glass a lightly bright golden yellow with a 1/4" white head that soon recedes to scattered thin patches of foam on the liquid and no lacing on the glass. Sipping produces a few scattered small patches of lacing. Soon there is no foam at all.
The aromas have a light funky earthy character found in some wild ales. There's also a hint of green orchard fruits and some floral character in the background.
The flavors are much as expected from the nose but with some sweetness in the mix as well. There's a bit of the tart apple and some pear up front, with the floral and the lightly funky earthiness. The touch of malt sweetness is in the background and helps to tie all the other flavors together.
The mouth feel is on the light side of medium bodied with a very slight prickly feel from the light carbonation. The finish begins as the floral, the tart fruit, the funk and the light sweetness start to fade a bit, allowing a bit of light malt to emerge before everything just fades away into a slightly tart, dry aftertaste in the back of the palate.
Overall this is a fairly tasty beer that I'll be happy to have again. (Indeed I may just go back to the place I bought it to get a few more to have in my "cellar." The beer is a nice collection of subtle complexities that are well balanced so that none really dominate the flavors to the extent of hiding the others. While most of the time the tartness seems the most forward, it doesn’t conceal the other flavors. So to use only two words I'd say the beer is subtle and complex. It definitely provides the motivation to seek out more beers from this brewery.

Nice tart beer, a fruity saison/sour mix it seems. Comes across more sour peach.
