True to our terroir, this sour ale was made using 100% local Pennsylvania ingredients, spontaneously fermented, cask aged between one to three years, young blended to old, and refermented in the bottle. This beer embodies a piece of time, to the people who make it, authentically here at the base of the Allegheny Mountains.

This vintage of Peach Spon Roots was spontaneously fermented in November of 2018, barrel aged on peaches until bottling in 2019, then matured an extra year in bottles. It opens with bold aromas of cotton candy, mineral water, sweet tarts and gummi peach rings. The flavor profile is of fresh tart peaches, soft lemongrass and honeysuckle. The finish is simple, dry and fast, with lingering layers of tropical fruit marshmallow fluff.

Thanks to Pinz412 for this as part of NBS BIF #13. 12.68oz bottle poured into 14oz teku. poured a cloudy dark yellow/light orange color with over an inch of white head that very quickly dissipated and left no lacing.

Some funk at the front of the nose, followed by mellow peach notes, with some earthy grain in the background.

Similar on the tongue, with the tart funk being a bit bolder, and a touch of wood showing up as well.

The body was light and crisp, and had nice champagne-like carbonation throughout.

Drinkability was good, a nice sipper.

Overall, a nice and enjoyable brew. Worth a shot if you see it.
