Poured from a cork & caged 750 mL bottle into a flared pilsner glass. Moderate hand. Bottled 2/12/2013, Batch #001. Made it home from Dallas, TX safe and sound in the ol' suitcase.
A: Light golden yellow with a pleasant cloudiness. 1-2 fingers of clean, white head. Good retention. Very light lacing.
S: Suprisingly tart and funky! Lemon. Brett. Coriander. Lightly floral. Light soap.
T: Initial tartness with a touch of sweetness transitioning to a very dry finish. Nice bit of funk pops up about half way and everything goes quite dry in a hurry. Crisp and clean with minimal aftertaste. A very light bitterness creeps in at the end. no alcohol presence.
M: Moderately high carbonation that suits the flavor profile well. Light body. Refreshing.
O: Like a gueuze that put the kibosh on the sour! Honestly, not at all what I was expecting, but damn if it didn't drink very well. I don't get much witbier, but as a gueuze you could do worse. Too bad I don't have another bottle to see how it ages.

Appearance: Pours a pale orange-yellow body, lightly hazed, with a thin, stray, white head.
Smell: Tart, citrusy notes of orange peel and lemon rind, soggy oaken barrels, ground spices, subdued vanilla hints and a far-off lick of lacto.
Taste: A tangy, fruity citrus peel flavor with sweet, spiced orange marmalade and a honeyed sweetness atop the smooth (smoove) malted wheat wrapped in slight vanilla cream accents. Light coriander. Moderately acidic. Plush tannic accents, a little underpinning of lactic. Drying, charmingly sudsy finish.
Mouthfeel: Medium-light body. Medium-high carbonation for a decidedly crisp mouthfeel.
Overall: Far, far removed from a typical wit, but, in a way, it was quite enjoyable.

2012 bottled 4/8/13 batch 002 consumed 1/3/15. Make way for other beer in your cellar. Finish is off. Otherwise an ok Berliner Weiss note on a wit beer.

Straw-gold, hazy and opaque. Two big fingers of sticky, pillowy head.
Sweet pear, lemon, orange blossom. Subtle vanilla. Green and bright.
More barrel in the flavor. Green oak, hint of vanillin, white grapes. Lemon peel, a subtle Brett funk and gentle tartness. Light, refreshing. Good stuff.
Fluffy body. Light, whipped. Tiny bubbles, like merengue. Smooth. Lactic tang sits on the sides of the tongue between sips. Soft, lemony bite.
Tasty, mad refreshing. Barrel character is just enough, nice that it doesn't overpower this delicate beer.
