The latest adition to our Sour Me Not series features a special fruit typically found in Brazil, the caju. From northeastern of Brazil, with sweet peel flavor and coloration ranging from red to yellow, its original name caju literally means “nut that produces itself”.

A: The beer is hazy pale light yellow in color and has a light amount of visible carbonation. It poured with a large patch of white bubbles on the surface, a narrow collar around the edge, and some lacing down the sides of the glass.
S: Moderate aromas of sour apples, lemons, and lactobacillus are present in the nose. I can't say that I've ever tried a cashew apple (caju) fruit before, but that's the best way I could describe the smell.
T: The taste follows the smell, starting off with sour flavors of lactobacillus (but with hardly any associated creaminess) and has notes of sour limes and apples.
M: It feels a bit more than light-bodied on the palate and has a little tartness with a moderate amount of carbonation.
O: This beer is definitely unique - it's sour and funky but has an interesting combination of flavors from the cajun fruit.

Such a unique sour. Distinct pepper flesh and nutty aromas in the scent, definitely still present in the taste albeit much less so. Perhaps a bit intense on the foam but a good body for the ABV and a decently biting sourness. Like the other Way Beer sours lots of berliner-like lemon and mineral flavors, though this one overall seems a bit tamer than the rest, I wish the caju was taken a step further in the taste. Lovin' this Sour Me Not series, very refreshing+unique low ABV wild ales that have all been great so far.
