Looks beautiful, feels fabulous. I know look and feel are the red-headed step children of beer rating, particularly IPAs, but the feel of this is truly one of the things that sets it apart. Pillowy, creamy, yet crisp. They milk the woodsy, earthy, musky side of Simcoe to great effect, extracting almost none of the citrus notes. Judging by the skill of the brewer, I'd say this is intentional. Earthy and creamy with lingering bitterness. Truly unique and crushable.

This beer was just short of being phenomenal. Very upfront, bright, estringency from the hops. Very resinous and piney. Light citrus notes throughout and extremely balanced with oats adding to a creamy texture. My only real fault was the strange lingering bitterness left in the back of my throat. I'm all for bitter beer, but it seemed like they may have overhopped this one a bit at the beginning of the boil.
