On tap at the Twisted Tasting in Santa Cruz. Pours a cloudy dark straw color with a small white head. Fantomey aroma. It’s got that cool lemony funk thing going on. Very good intro sour type of beer. You can really isolate the brett and lacto notes; brett contributes the dry rustic character and the lacto gives in a tartness that’s almost yogurty, reminiscent of those unflavored probiotic drinks that have a hundred zillion colony-forming units of a dozen different bacteria. And when you think about it, that’s basically what Fantome dregs are. This is somewhere in between a bretty saison and a berliner weisse, with a splash of Temptation. Good choice for the namesake beer!
