750 mL bottle poured into a snifter.
Appearance - Black with an ample khaki head. Nice surface foam. Thick collar.
Smell - Tart cherry acidity. Dark roasted malts. Coffee malts. A little bit of wine.
Taste - Tart right up front. Dark fruits. Dark roasted coffee malts and a bit of bitter chocolate. Oak is strong. Astringent wine flavor. Tannic and red wine finish.
Mouthfeel - Well carbonated. Medium body.
Overall - Works well for a sour stout. Very pleasant acidity and wine characteristics.

"The Professor Belgian-style imperial stout with cherries aged in pinot noir barrels."
On tap at the brewery. Darkest brown with a sudsy tan head. Cocoa powder aroma with coffee roast and some woody wine influence. Earthy malty flavor, roasted burnt coffee, vinous wood, jammy berry wine notes, black cherry yogurt, iodine, pepper. More bready and fruity than your typical dark chocolate/espresso/alcohol bomb imperial stout. Lots going on here, but the barrel and fruit are subtle on the whole. Nice smooth Belgian carbonation and body.
